About This Drink:

A refreshing and slightly tropical coffee drink perfect for summer. It combines the smooth, bold flavor of cold brew with creamy coconut and a hint of vanilla. This recipe serves one.

Ingredients:

  • 1/2 cups Coarsely ground coffee (medium-dark roast)
  • 2 cups Cold Water
  • 1/4 cups Coconut milk (canned or carton, full-fat for creaminess)
  • 1 tsp Vanilla extract
  • 1 - 2 tsp Simple syrup (adjust to taste)
  • Ice cubes
  • Toasted coconut flakes for garnish (optional)

Instructions:

1. In a jar or pitcher, combine the ground coffee and cold water, stirring to ensure all grounds are wet; cover and let it steep in the fridge for 12-18 hours.
2. Strain the mixture through a fine mesh sieve or coffee filter into a clean container, discarding the grounds—this is your cold brew concentrate.
3. In a glass, mix the coconut milk, vanilla extract, and simple syrup, stirring well.
4. Fill the glass with ice, pour in 3/4 cup of the cold brew concentrate, top with the coconut-vanilla mixture, stir gently, and garnish with toasted coconut flakes if desired.

Preparation Time:

~15 minutes active (plus 12-18 hours steeping); active steps include grinding coffee (~2 minutes), setting up to steep (~5 minutes), straining (~5 minutes), and assembling the drink (~3 minutes).
